Authentic Polish Golumpki Recipe | Stuffed Cabbage Rolls | Polish Food

The cool fall weather and end of Daylight Savings Time means my family gets a hankering for some good old-fashioned Comfort food.   This Stuffed Cabbage Rolls, Golabki or Authentic Polish Golumpki  - Polish Casserole recipe makes a delicious, satisfying supper for your family. Make this lazy deconstructed casserole for the holidays - traditional Easter or Christmas dish.

My daughter wanted to learn how to make these easy Polish Stuffed Cabbage with sweet and sour tomato sauce.   It's nice to pass on ethnic family traditions.  Golumpki is very much like stuffed peppers, except with cabbage, and the meat mixture is very much like you would use for a meatloaf.

The Polish Casserole Dish Golumpki recipe itself is easy, however it is very time consuming, so plan ahead!  The taste of this traditional comfort food is worth the effort.  It took us about 2 hours to make.  We doubled the recipe and made about 48 Golumpki.

Each tray held about 6 medium size stuffed cabbage.  My daughter took 3 trays home, I gave one to another daughter, and kept 3 casserole dishes for ourselves, which became freezer meals.  We usually have the kids stop in for dinner so it's nice to have a meal on-hand for unexpected company!

If there's extra small cabbage leaves and meat filling left over, I turn it into Lazy Golumpki

Authentic Polish Golumpki Stuffed Cabbage Rolls


Here's the recipe we used for our Polish Golumpki, or Stuffed Cabbage and meat filling:

1 Green Cabbage, large

*Meat Filling*
2 lbs. Ground Beef (or use Meatloaf Mix)
1/2 c. Minute Rice
1 egg
1/2 c. Bread Crumbs, plain
1/2 c. water
salt, pepper to taste

*Sauce:*
2 (14 oz.) cans Tomato Sauce
2 tbl. Light Brown Sugar
1 tsp. White Vinegar
1 tsp. Lemon Juice

Boil cabbage in a large stock pot until almost soft. Drain, separate each leaf and cool.
Prepare meat mixture (ground beef, egg, bread crumbs, water, rice, salt, pepper)
Prepare sauce (tomato sauce, brown sugar, white vinegar, lemon juice) and bring to a slight boil
Stuff each cabbage leaf with 1-2 tablespoons of meat mixture. Roll up and tuck in ends.  Secure with toothpick
Cover bottom of baking dish with sauce.  Place Golumpki seam side down in pan.  Cover with more sauce.
Bake for 1-1/2 hours at 350 degree oven.
